
Oh my chia! What is this?
It’s Coconut Chia Pudding! I have been enjoying this as a healthy summer dessert. It’s delicious plain or topped with fruit and/or nuts.
Coconut is a healthy fat that feeds the brain as well as offering a myriad of internal and external of benefits including; aiding digestion and stimulating metabolism. Coconut oil can be used in massage therapy as it has a nice consistency.
This recipe is very simple, nutritious, and delicious which are three things I always look for when creating or eating food.
Benefits of chia include being high in omega 3 fatty acids, antioxidants, and fiber.
I found this recipe at The Woman’s Place in Kelowna, BC (www.twpfitness.com) and just had to share.
Ingredients:
¼ cup chia
1 cup coconut milk (light or full-fat depending on preference)
1 tsp honey or 1/16 tsp stevia
Mix all ingredients together and place in a small bowl or mason jar. Let it set in fridge overnight.
Remove from fridge and make sure it has set into a thick pudding (if it has not let it sit a bit longer)
Eat plain or enjoy with fruit and/or nuts! Try it and let me know what you think.
